Foodie Friday {Apple Dumplings}…

Yep, today is Friday.  Not yesterday … today.  I thought all along that yesterday was indeed Friday.  What a week!

Fall is here … officially!  Hallelujah!  The fall baking and cooking has started.  I almost jumped straight to pumpkin baking … but felt I was skipping over the apples.  Pinterest is my friend and she recommended I make Apple Dumplings.

I have made many apple desserts in the past not an actual dumpling.  Raymond loved them and pretty sure there is no turning back!

APPLE DUMPLINGS

*Modified From This Recipe*

  • 1 package refrigerated biscuits (10 ct)
    • I used the flaky kind
  • 5 apples
    • Gala or Golden Delicious will cook up better
  • 6 Tbsp sugar
  • 1 Tsp ground cinnamon
  • 3 Tbsp unsalted butter (softened)
  • 3 Tbsp golden raisins (chopped)
    • Splurge for the golden variety
  • 1 egg white (lightly beaten)
  1. Preheat oven to 425 degrees.
  2. Open biscuit container.  Roll out eat biscuit until roughly 8″ in diameter.
    1. No need to break out a ruler.  Just guesstimate.
  3. Core and peel the apples.
  4. Cut the apples in half through their equator (aka cut the apple horizontally – not vertically)
  5. Combine sugar and cinnamon in a small bowl.
  6. In a second bowl, combine butter, raisins, and 3 Tbsp cinnamon/sugar mixture.
  7. Place an apple half in the middle of each rolled out biscuit.
  8. Stuff the core with cinnamon raisin butter mixture.
  9. Fold up the dough around the dumpling.  Pinching to secure at the top.
  10. Brush the tops of the dumplings with egg white.
  11. Sprinkle with remaining cinnamon/sugar mixture.
  12. Bake 20-25 minutes until golden brown.

Enjoy!  Remember, the type of apple matters as you don’t want a hard or mushy apple when you are finished baking.

Downtown Davidson, NC…

After a very busy week of organizing, Raymond and I decided to get out of the apartment on Saturday.  We were considering anything that allowed us to enjoy the beautiful fall-like day and take Cody along.

We decided to head up to Lake Norman.  He thought we were going to Birkdale Village … which we ended our day there.  But I had other plans.  I wanted to check out Downtown Davidson.  I have several clients who live in Davidson, and I have always admired the quaint downtown as I pass by.

After parking, we took a nice long stroll on Davidson College‘s campus.  It was beautiful!  Slightly reminded us of UNC’s campus with a Williamsburg feel.  We walked … and walked … and walked.

Next up was a trip downtown.  I was dying to go into the shops like Monkee’s and The Village Store.  But with a pup in tow, I drooled from afar.

We weren’t hungry but I would like to try their restaurants.  The patios were packed and the air smelled of lunch delight. 🙂

I’m thinking Christmas in Davidson is a must-see event for us this year! 🙂

Photogenic Dog {Dexter}…

Have you ever met a photogenic dog before?  I know one — his name is Dexter.

Have you ever met a crazy wild dog that might have the life span of a cat (aka 9 lives)?  I know one — his name is Dexter.

Dexter is my parent’s dog.  We are almost positive that he is a Silky Terrier.  We rescued him from their next door neighbors about 10 years ago.  He is as wild today as he was then.  I personally think he will outlive us all — seriously.

He has several nicknames.

  • The Sweetness
  • Wild Man
  • Brownie

I wonder what his little dog brain says.  I imagine it goes something like this:

“Lizard…lizard…lizard.  I smell you.  Where are you.  I’m going to eat you… Oh frog!  I like those too.  Is it time for dinner?  I’m starved.  I want to go outside.  I need to eat.  Lizard…lizard…lizard.”

Yes he is wild and crazy.  Yet also the most photogenic dog I have ever met.  He takes the best pictures ever.  Take a look. 🙂

DIY {Fabric Covered Cork Board}…

DIY Fabric Covered Corkboard | Pure & Simple

I aspire to be a lot of things, one being a crafter.  I few months ago I successfully completed this project {DIY Fabric Covered Cork Board}.

I started with this picture.  Gift from my mom when I moved into my first big girl apartment … 6 years ago.  I knew the picture wouldn’t make the cut once I moved in with Raymond, so I decided to do something with it.

DIY Steps for Fabric Covered Cork Board

  • Take picture backing off.
  • Remove picture and glass.
  • Prime & paint the frame.
    • I used flat black spray paint.
    • I ♥ spray paint!
  • Attach cork to cardboard backing from original picture.
    • I purchased a roll of cork from Michaels
    • I attached with spray adhesive.
  • Cover with fabric.
    • I purchased fabric from Hobby Lobby.
    • I used duck tape to cover.
  • Pop the fabric covered cork back into the frame.

So… what do you think? 🙂  Successful?

I would like to do something similar with a distressed/weathered look.

{Guest Post} Pam’s Cheeseball Recipe…

Do you remember Pam Sultzman’s Guest Post a few months ago?  Well, in case you missed it … check it out here.

Pam was kind enough to send a recipe over as well.  And what great timing … the get togethers and socials are piling on the calendar.  If you are looking for an easy and tasty cheese ball recipe, then look no further!

 3 in 1 Cheese Balls

From the kitchen of: Pam Sultzman 

  • 2 tablespoons finely chopped onion
  • 2 tablespoons milk
  • 2 tablespoons Worcestershire sauce
  • Coarsely cracked black pepper
  • 1/2 cup crumbled blue cheese
  • Minced fresh parsley
  • 1/4 teaspoon garlic powder
  • Finely chopped pecans
  • assorted crackers
  • 1 (8 ounce) package cream cheese, softened
  • 4 cups shredded cheddar cheese, room temperature

Note:  To keep hands and countertop clean, spoon cheese mixture onto a piece of plastic wrap. Working from the underside of the wrap, pat the mixture into a ball. Complete recipe as directed.

In a mixing bowl, beat cream cheese, cheddar cheese, milk, onion and Worcestershire sauce until fluffy. If a smoother spread is desired, process in a food processor until creamy. Divide into thirds (about 1 cup each). Shape first portion into a ball; roll in cracked pepper. Add the blue cheese to the second portion; mix well. Shape into a ball; roll in parsley. Add garlic powder to the remaining portion; mix well. Shape into a ball; roll in nuts. Cover and refrigerate. Remove from refrigerator and let stand 15 minutes before serving. Serve with crackers.

Girl’s Got Style {Kate Middleton}…

I pride myself on two things:

  1. I can organize anything
  2. I can cook like it’s my job

I do not pride myself on being fashion forward.  I am so thankful for Pinterest and it’s fashion inspiration.  There are few people that I would consider stylish.  There are also few people I would try to mimic in style (hair and clothes).

However, there is one person who I think is the stylish of them all.  Kate Middleton.  Girl’s got it and she works it!

Why I ♥ Her & Her Style:

  • Simplicity of everything (hair, shoes, outfit, fascinator)
  • Smile … always.  Your best accessory
  • That hair
  • Her love for dresses
  • Simple, yet elegant shoes

Gotta get me one of those fascinators! 😉

Organizational Layaway…

If you start to clean out a closet or garage, then you will find that decisions will need to be made … quickly.  What are you going to do with all this stuff?  Keep it?  Throw it away?  Donate?

You start asking yourself those questions each time you come across something new.  It can be exhausting and your brain will be in overdrive.

 

 

Recommendation:

If you aren’t quite ready to let something go (i.e. trash or donate), then create an organizational layaway program.

Gather the items that you aren’t ready to make a decision on.  Place them in a box or tupperware bin.  Seal the bin.  Add a date/note to the outside.  Add a date/note to your calendar as well.

For example:

What is left in the box at the end of 3 months can be donated.  If you haven’t used it or needed it within that time frame, then you can safely let it go.

This will take some of the pressure off while sorting and clearing.  Be sure to actually follow up on the timeline!

Tom Johnson Camping Center…

Do you camp or glamp?  I started camping with my parents when I was a wee young lassie.  And I do mean camp.  Tents and all.

Now we glamp.  An RV the size of my apartment is not camping … that is glamping.  About 16ish years ago, my parents bought their first motorhome.  A brown bomber from the 1970s.  The motorhome came from Tom Johnson Camping Center located in Marion, NC.  They were hooked and have since used them for every other RV purchase since the brown bomber.

Tom Johnson Camping Center throws a BBQ rally every September to thank his customers.  We have gone the past 16 years.  I have missed a few here and there, but decided to unplug this past weekend and head to the mountains with them.  We had a blast and here are some pictures to prove it. 🙂

Foodie Friday {Greek Chicken Pitas}…

Happy Happy Friday!! 🙂

The DNC came to a close last night, and I must say, I am so proud of our Queen City.  She did an amazing job playing hostess with the mostess.

Bigger news, I am taking today off! 🙂  Well half a day really; the boss gave me permission. 😉

I am heading to the Tom Johnson Camping Center Rally with my parents and our 3 doggies.  It is a little mountain and a lot of relaxing.  I will be practicing my crocheting {yes I decided to take this up} and rereading a few books. 🙂

I will be blogging about it on Monday.  😉 As a teaser, this is my favorite spot to chill all weekend long!  See me back there in my camping chair. 😉

Now, on to Foodie Friday!

Raymond and I made these delicious Greek Chicken Pitas a few weeks ago, and it was TO.DIE.FOR.

GREEK CHICKEN PITAS

  • (1 Cup) fat-free plain greek yogurt
  • (2 Tbsp) packed, fresh mint, chopped
  • (2 Tbsp) packed, fresh dill, chopped
  • (1/4 Tsp) ground cumin
  • (1/2) clove of garlic, crushed
  • (1/4 Tsp) salt
  1. In a small bowl, combine the above ingredients.  Let stand.
  • (1 Tbsp) lemon juice
  • (3 Tsp) oil
  • (1/4 Tsp) dried oregano
  • (1/4 Tsp) salt
  • (1/3 Tsp) ground cumin
  • (1/2) clove of garlic, crushed
  • 1 lb chicken breasts or chicken tenders
  1. Add above ingredients to a baking dish.
  2. Turn to coat.
  3. Let stand.
  4. Prepare outdoor grill. (We used an indoor cast iron grill pan).
  5. Grill chicken 10 – 12 minutes or until no longer pink in center.  Turn once.
  • (1/2) cucumber (Persion or English cucumbers work best)
  • (1 lg) ripe tomato
  • (1/8 Tsp) salt
  • (1 Tbsp) lemon juice
  • (1 Tsp) oil
  • (1/2) clove of garlic, crushed
  • 4 whole wheat pitas, cut in half
  1. Cut cucumber and tomato into chunks.
  2. Toss in large bowl with oil, salt, lemon juice, garlic.
  3. Transfer chicken to serving plates.
  4. Grill pitas until toasted. Turning once.
  5. Serve with chicken, yogurt sauce, and cucumber mixture.

It is delicious!  🙂

Organizing with Post-it Notes {Planners}…

I am a self proclaimed planner lover.  I love anything sorted and organized in a planner, and I like paper versions.  For some reason, I like being about to draw, doodle, and mark events in different colors.  You don’t get the same feel with an online planner.  I have yet to find an online version that lets me insert a little tooth for days when I have a dentist appointment. 😉

So if you love planners as much as I do, then here are some suggestions on taking it to the next level with some Post-it products:

Post-It Tabs

Allows you to separate your planner into sections.  Or tag the current week.

Wall Pockets

I. LOVE. THESE. I use them to hold my receipts in between my finance days. You know, those days when you input your receipts and look at where your money is going?  Yes, I am a bit old school but the process works for me and I can track my expenses.  My accountant loves me.  {Hi Brian ;)}

Arrow Flags

Great for reminding you of the days when you absolutely cannot miss that most important {insert activity}.  I like the flags because they visually remind me.  Dings and things are great on phones, but I like to see stuff.

Planner Love

The coolest all-in-one planner I have come across is the Erin Condren Life Planner.  It is amazing.  I balked at the $50 price tag, but I think it is worth it.  There is a section for everything that you may or may not want to track.

For example: I like to track my eating habits and my workouts.  I hate writing each down in their own separate notebook because I like to see it visually in relation to the calendar.
