Have you missed Foodie Fridays?
I have missed cooking. We decided to forgo the grocery store this week and use up what we had in the refrigerator and pantry. It is Friday and I am going a little crazy. I like planned menus and planned meals. This “use what we have” nonsense is better left for those fly-by-the-seat-of-their-pants kinda person. And that ain’t me. 😉
Summer is drawing to a close {I hope sooner rather than later}, but if you want to get more out of those tomatoes and veggies…
GUACAMOLE
- 2 ripe avocados
- 1 small onion, diced
- 1 small tomato, diced
- 1 jalapeno, diced
- 1-2 Tbsp cilantro, chopped
- 1/2 lime, juiced
- 1 clove of garlic, minced
- salt & pepper
- Mash avocado in a bowl.
- Add remaining ingredients and stir.
- Season with salt & pepper.
- Serve immediately.
WHITE SANGRIA
- 1 bottle white wine (I prefer Sauv Blanc)
- 1/2 bottle Sprite or Sierra Mist (don’t get the Diet version)
- 1-2 lemons, sliced
- 1-2 limes, sliced
- 1 orange, sliced
- Strawberries
- Blueberries
- Watermelon
- Peaches
- Pineapple (canned or fresh)
- Mix all ingredients together in a pitcher.
- Serve chilled.
You can mix and match the fruit. I add whatever is in the refrigerator. The more the merrier. Cheers! 🙂
